Easy Crockpot Tortilla Soup
There’s something about a pot of tortilla soup slowly simmering that feels like home. This recipe is deeply rooted in the flavors I grew up loving, inspired by time spent in both Mexico and Southern California. It’s rich, comforting, and full of warmth, yet simple enough to make on a busy day thanks to the crockpot.
One of the key ingredients in this recipe is red chile sauce, which you can typically find in the Mexican food section of most grocery stores. If it’s not available, a good-quality red enchilada sauce is a great substitute and still delivers incredible flavor.
Crockpot Tortilla Soup Recipe
Ingredients

1 onion, finely chopped

1 tablespoon olive oil

3 cloves garlic, crushed

1 jalapeño, seeded and chopped

1 (16-ounce) can diced tomatoes, undrained

2 tablespoons tomato paste

2 green chiles, roasted and chopped

2 teaspoons ground cumin

1/4 teaspoon cayenne

1 tablespoon cornmeal

2 1/2 cups chicken stock

2 cups red chile sauce (red enchilada sauce can sub if needed)

2 boneless chicken breasts

1 avocado, pitted, peeled, and diced

2 limes

Fresh cilantro

Monterey Jack cheese, shredded

Directions

In a skillet, sauté the chopped onion in olive oil until softened.

Transfer the onions to a slow cooker and add garlic, jalapeño, diced tomatoes, tomato paste, green chiles, cumin, cayenne, cornmeal, chicken stock, red chile sauce, and chicken breasts.

Cover and cook on low for 5–6 hours.

Remove the chicken breasts, shred them with a fork, and return them to the slow cooker.

Stir in the diced avocado, cover, and cook on low until the soup is fully heated.

Serve hot and garnish with fresh lime juice, cilantro, shredded cheese, and crunchy tortilla chips.

This soup is best served with plenty of toppings so everyone can customize their bowl. Add extra avocado, a squeeze of lime, or a handful of crushed tortilla chips for added texture. It pairs beautifully with a simple salad or warm tortillas on the side.
